On the Type I Curta (early model 1949 or 1959), the carriage is numbered from 1 to 11. However, the maximum number I can set my CURTA to is 6.
That's probably normal given that the numbering dial only has 6 digits...
but why numbering the carriage to 11 if it is not used?

Your question is common. The only reason for all the numbering you mention is simply to have every digit in the results register numbered.
